Perfectionist Chef Gan put his years of pastry training and experience to the ultimate test: working tirelessly on his recipe for half a year, making incremental tweaks batch by batch until he found what he was looking for.
“Most of the time when you encounter a pie, even if it’s a home recipe, you can tell they use shortening by the first bite,” Chef Gan explains. “It doesn’t taste bad, in fact it tastes nostalgic. It just doesn’t taste like butter. We wanted a buttery taste right away, not oversaturated, but balanced in the whole mouth to complement sweet or savory fillings.”
Our fillings pack a punch and we don’t want to overpower them in any way, but we do want the crust to be just as much a flavor experience. We want our signature all-butter crust to serve as an excellent foundation. For lovers of crust, the signature all-butter will be a treat all on its own.
And we didn’t skimp on using the richest butter taste to replicate the crust for our vegan friends. We use organic vegan butter. It hits all the hallmarks of a quality vegan baking stick – lactose-free, gluten-free, non-GMO, and its even kosher. So our vegan pies are really no different in uncompromising quality for balance and flavor, than our non-vegan pies.
We love pies, and we’ve had some amazing pies that use shortening.
